Chocolate Chip Coconut Flour Pumpkin Bars1

Are you ready for a few pumpkin?! I’ve been waiting for it like a child on Christmas morning. And I assume you actually don’t have an option because right here I am shoving this formula in your face. There’s no turning back now: Pumpkin period has officially began on Ambitious Kitchen.

In fact, did you know my love for pumpkin is correct up top with my love for all things nut butter? I’ve usually said that easily could choose my last food on earth, it would be pumpkin pie with whipped cream. Will that produce me a basic bitch?

Today: Paleo Coconut Flour Pumpkin Pubs (!!!)

Honestly, these pubs are one of my absolute FAVORITE pumpkin bars in AK. I originally wanted to contact them pumpkin pie bars because of how moist and lovely they are but the title just got too much time. What you do need to know would be that the spices are amazing, inviting and down right addicting. The coconut flour helps draw out the natural sweetness from the pumpkin, as a result I didn’t need to sweeten them much.

These bars are healthy enough to become eaten as a snack, but definitely taste indulgent like these were made for a party. Either way, I understand you’ll love this nutritious formula and get back to it over and over. My assistant and I couldn’t maintain our hands from the pan after they came out of the oven. #pumpkinvictims

Ingredients

1 teaspoon vanilla extract

1 tablespoon unsweetened almond milk

2 eggs

Instructions

Preheat oven to 350 degrees F. Series an 8×8 in . baking pan with parchment paper and squirt with nonstick food preparation spray.

Add pumpkin puree, maple syrup, vanilla extract, almond butter, almond dairy and eggs to a big bowl and mix until very well combined, even and creamy.

Add in coconut flour, cooking soda, sodium and the remaining spices. Gently fold in 1/3 cup of chocolate potato chips into the batter. Spread batter equally in prepared skillet. Bake for 20-25 moments or until toothpick happens clean in the middle. Transfer pan to some cable rack to great.

Melt remaining 1/4 cup of chocolates chip in a little saucepan over low heat. Once completely melted, drizzle the delicious chocolate over the bars. Another option would be to sprinkle the remaining chocolate over the top of the bars right when they come out of the range. It’s your decision! Cut into 12 pubs. Enjoy!

I love these bars.We made it with whole wheat grains because I cannot come across coconut flour where We live, I idea since coconut flour absorbs liquids more than wheat flour, I will make some We omitted the dairy and used 3/4 glass flour rather than 1/ baked it for approximately 30 was so delicious as well as the texture so light.

Treat every once in awhile is great…on another hand, snow cream accompanied by a plate of buttery snacks (guilty as charged) isn’t. The thing is, for me, if I go too healthy, temptation just comes knocking.

Love the idea of salmon and eggs. Might try somewhat undercooking and then pack that one like a work lunch time to reheat and make everyone in the lunchroom jealous!
