Kale, Edamame & Quinoa Salad With Lemon Vinaigrette1

I mean, any moment I even think about having a sweetheart I can’t help but chuckle; every one of the men I continue dates with are either A) committed to work, B) completely uncomfortable, or C) possess questionable intentions. But I assume that’s what goes on when you are 23.

So for the present time I believe I’ll stick to solitary lady things before man of my dreams (who may resemble Joshua Jackson aka Pacey from Dawson’s Creek) comes into my entire life. Plus easily had a boyfriend I most likely couldn’t escape with making him eat quinoa and kale instead of manly beverage battered onion rings and mugs of BBQ sauce… or whatever Burger King is marketing this week.

What are your ideas on that?


Let’s move ahead discuss adult things. Like salads.

My mother used to produce a big batch of raw kale salad with lemon, essential olive oil, garlic clove, and bell peppers. She’d allow it still a couple of hours until the lemon juice broke down the kale and the tastes became melded collectively; it was sensational.

It’s like a healthy little fairy tale I dreamt up. The content ever after is that flavor explosion in the mouth area.

Juicy mangoes, red onion, grape tomato vegetables, creamy ripe avocado, nutty quinoa, crunchy kale, and edamame. This salad just might have everything I’ve ever desired.

I tossed it in just a little lemony basil vinaigrette which uses about 5 seconds to mix together since it’s just a little lemon, garlic essential olive oil, basil, salt, and sugar.

The much longer the salad sits using the dressing, the better it gets.

This salad is the perfect lunch. Or it might be great with grilled fish.

It’s just too dang good not to try.

Kale, Edamame, and Quinoa Salad with Lemon Vinaigrette


2 mugs cooked quinoa (or about 3/4 glass uncooked quinoa)

1 1/2 glass edamame beans, cooked and cooled

3 mugs finely chopped Tuscan kale, ribs removed

1 cup sliced grape tomatoes

1/2 crimson onion, diced

1 avocado, pitted and either sliced up or diced

2 tablespoon toasted almonds or pumpkin seeds, if desired

For lemon vinaigrette:

1 garlic clove, minced

1/8 teaspoon salt


To create dressing: place essential olive oil, lemon juice, garlic clove, sugar, basil, and sodium in blender or meals processor. Blend/process for 10-15 mere seconds; set aside.

In medium bowl toss quinoa, kale, and edamame together; add lemon vinaigrette and toss so that the salad is fully coated. Place in refrigerator for 20-30 moments to let flavors soak in.

Before serving, toss salad again and add tomatoes, onion, mango, and avocado. Garnish with toasted almonds or pumpkin seed products if desired.

Oh zero! Certainy you’ll reign in a man with fantastic taste in food. Probably you’ll receive as lucky as I did so, and discover yourself a guy whose idea of an excellent weekend is definitely apple picking, pie baking, cider producing, and spinach couscous with oranges and olives for supper.

The idea is… not absolutely all dudes want Burger King or BBQ. Beverage, maybe. But that’s a different story.

Oh Personally i think you over the man-food vs our-food issue.. As an perpetually solitary girl with a recent man added to her life, I can tell you it’s going to be a hard changeover. Him.. not really me. I won’t stop producing kale salads!

If you’re lucky you will probably find an already-trained guy. I suggest going out at yoga exercise studios and farmer’s markets 😉

Anyways this appears like a lovely dish.. simple, healthful and nourishing. Love the addition of mango.. I will be creating a big batch this weekend!

Oh, and We married a meat-n-potatoes kind of man…and slowy but certainly he’s arriving around within the healthy stuff. In fact quinoa is one of his favorite foods now. So it’s possible. Even though it seems difficult initially. hahaha

Good thing with my boyfriend is that being a chef, he also loves good healthy food. And the casual 400 g of beef with potatoes. Ugh.

Kale from a farmers marketplace and Niagara peaches (substituted for mango) made this salad popular. Leftovers ideal for lunch. Ahh, summertime!

I’ve also made Monique’s egg, avocado, bacon, jack sandwich as well as the rooster, chick pea chopped salad – all delish!

Great gluten free cheesecake recipe taste! I added some diced serrano pepper for a supplementary kick. Also I usually add ghee + ocean sodium to boil using the quinoa. The mango was a delicious deal with.

Ha don’t discredit all of us men thus fast! Yes, the beverage battered deep-fried onions might be a little hard to avoid.. Financial firms a great treat for also the manliest of manly guys, especially after a day out within the mountains! Deliciously relaxing.

We will certainly be eating this tomorrow!
